Approach
There is no universal method in hospitality.
Every project is different, every market is different, every team is different — and no two decisions are the same.
What I bring is a perspective shaped by 25 years of hands-on experience. Not a one-size-fits-all model. A clear understanding of the project as it truly is — and a clear direction for what comes next.
STEPS
— UNDERSTAND THE PROJECT
Before advising on anything, I read the project.
The place. The location. The market. The real competition. The target audience — not the one we imagine, but the one that will actually book. The existing or planned offer. The business model. The constraints. The risks.
Some people skip this phase. That is where projects become fragile.
My role: to separate the enthusiasm surrounding the project from what truly holds up.
— MAKE THE CALLA hospitality project cannot say everything, promise everything, or target everyone.
You have to choose. And choosing also means letting go of certain things — even good ideas that are simply not the right ideas for that particular project, at that particular time.
I set a clear direction: positioning, target audience, promise, core offer, expected experience. Something that is defensible and immediately actionable.
— BUILDA strategy without execution has no value.
The third step is to make the project tangible: a structured offer, a carefully designed guest journey, clearly defined key messages, a coherent marketing message, clear commercial priorities, and an aligned team.
I lead the implementation, working with my team and specialist partners according to the project’s needs.
Everything required for a venue to truly open — or reopen — in the best possible conditions.
WHEN SHOULD YOU CALL ON THINK BIG?
You have a project, an intuition, perhaps even a location. Before committing funds, you need to know whether it holds up. This is the right time for a feasibility study.
BEFORE INVESTINGThe project is underway. Now it needs to be structured so that opening day — and the days that follow — run smoothly. Concept, offer, guest experience, team, and commercial strategy.
BEFORE OPENINGThe establishment already exists. It is performing below its potential. Something is no longer converting — the image, the offer, the channels, the experience. You need to understand what before changing everything.
BEFORE REPOSITIONINGToo many projects invest in communication before clarifying what they want to say and who they want to reach.
Communication amplifies what already exists.
If the foundations are not solid, it amplifies the problems too.
BEFORE COMMUNICATINGBEFORE A MAJOR DECISIONSometimes, you don’t need a full assignment.
You need a senior, direct, outside perspective — someone who tells you what they see, not what you want to hear.
